Artichoke Spread on Bread

The price of mayonnaise varies greatly between store brands and national brands. Save money and purchase the store brand for this artichoke spread recipe. Add a squeeze of lemon juice for a flavor boost.

Ingredients

1 (14-ounce) can artichoke hearts, drained

1/2 cup mayonnaise

1/2 cup grated Parmesan cheese

1 loaf cocktail-size pumpernickel bread

Directions

  1. Preheat broiler. Cut artichoke hearts into chunks.

  2. Combine mayonnaise, Parmesan and artichokes in a small bowl; mix well.

  3. Spread 1 tablespoon artichoke mixture on each slice of bread. Arrange bread on a baking sheet.

  4. Broil bread until artichoke mixture is lightly browned, about 5 minutes.

When you are in a hurry, combine all the topping ingredients, including the artichokes, in a food processor. Process until well until the artichoke spread is mixed, then spread it on the bread.
