Lemon Dill Asparagus

When asparagus is out of season, or too pricey for your budget, you can save money and still serve a delicious vegetable side dish by using green beans. Choose either fresh green beans or the frozen French-cut variety.
Ingredients
1 lb fresh asparagus, trimmed
1 cup water
1/4 cup fresh lemon juice
1/2 cup chicken broth or dry white wine
1 Tbsp dried dill
1 lemon, sliced
1 fresh dill sprig
1/2 cup mayonnaise
2 Tbsp lemon juice
1 tsp dried dill
Directions

Combine asparagus, water, lemon juice and broth in a large skillet. Cover; bring to a boil over medium-high heat.

Cook asparagus for about 3 minutes. Add dried dill. Cook until asparagus is barely tender, about 2 minutes longer.

Drain asparagus; place on a serving platter. Garnish with lemon slices and dill sprig.

Meanwhile, for sauce, combine mayonnaise, lemon juice and 1 teaspoon dried dill in a small bowl; mix well. Serve alongside asparagus.
