Ham & Asparagus Roll-Ups

Prosciutto, the Italian air-cured ham, can be rather pricey when not on sale. You will save money if you substitute thinly sliced honey-baked ham found in the deli section.
Ingredients
25 asparagus spears
1 1/2 Tbsp Dijon mustard
25 thin slices of prosciutto or ham
Makes 25 appetizers
Directions

Trim about 2 inches off ends of asparagus.

Bring a large pot of water to a boil. Add asparagus; return to a boil. Cook for 1 minute longer. Drain asparagus in a colander. Pour cold water over asparagus to stop cooking.

Spread a small amount of mustard over one side of each prosciutto slice.

Place asparagus spear over short end of each prosciutto slice; roll tightly. Arrange wrapped asparagus on a serving platter.
Great Ideas
In a time crunch, drained, canned asparagus spears may be used. Omit steps 1 and 2, and use two 15-ounce cans of asparagus.
