Mediterranean Burgers

Ground lamb can be expensive and difficult to find at the supermarket. You can save money on these Mediterranean Burgers by purchasing lamb stew meat and grinding it yourself, or ask the butcher.
Ingredients
1 lb ground lamb
1/4 cup bread crumbs
1 egg
1 tsp dried oregano
1/2 tsp dried rosemary
1/4 cup plain yogurt
2 Tbsp chopped cucumber
1/4 cup mayonnaise
1 green onion, chopped
1 tsp lemon juice
1/2 tsp grated lemon peel
2 large pita breads, split
4 lettuce leaves
1 large tomato, sliced
Directions

Combine lamb, bread crumbs, egg, oregano and rosemary in a large bowl; mix well.

Form lamb mixture into 4 patties. Heat a large skillet over medium-high heat. Add patties. Cook, turning once, until patties are cooked through, about 15 minutes.

Meanwhile, for sauce, combine yogurt, cucumber, mayonnaise, green onion, lemon juice and lemon peel in a small bowl; mix well.

Line each pita half with a lettuce leaf and tomato slices. Add burgers. Top with yogurt sauce.

Mediterranean Burgers tip: Use the leftover pitas to make Greek pizza. Split the pitas horizontally; top each with crumbled feta, black olives, capers and oregano. Broil until the cheese is melted.
