No need to add baking mix to your shopping cart. It is less expensive to make your own for these Jalapeno Cheese Biscuits. For 2 cups, combine 11/2 cups flour, 3 teaspoons baking powder, 1/2 teaspoon salt and 5 tablespoons shortening.

Ingredients

2 small jalapenos

2 cup instant baking mix

2/3 cup milk

1/2 cup shredded Cheddar cheese

1/2 cup melted butter, divided

Directions

  1. Preheat oven to 450°F. Cut jalapenos lengthwise into halves; discard seeds. Chop finely.

  2. Combine baking mix, milk and Cheddar in a bowl; mix well. Add jalapeños and 1/4 cup butter. Beat with an electric mixer set at high speed for 30 seconds.

  3. Drop dough by spoonfuls 2 inches apart onto 2 ungreased baking sheets.

  4. Bake until golden brown, about 10 minutes. Brush with remaining butter. Serve immediately.

Jalapeno Cheese Biscuits tip: Try using canned jalapeños to save time. They are already deseeded and usually already sliced.
