Summer Vegetables with Citrus Dressing

Cilantro, also called Chinese parsley or fresh coriander leaf, is sometimes difficult to find or too expensive. You can substitute chopped fresh parsley with excellent and less expensive results in this Summer Vegetables with Citrus Dressing.

Ingredients

2 tomatoes

2 cucumbers

2 Tbsp lemon juice

2 Tbsp lime juice

1 clove garlic, minced

1/2 tsp salt and 1/4 tsp pepper

1/4 cup olive oil

1/3 cup chopped cilantro

12 oz radishes

6 green onions

Directions

  1. Seed and chop tomatoes. Peel, seed and chop cucumbers.

  2. Combine lemon juice, lime juice, garlic and salt in a large bowl. Add olive oil. Beat with a fork or wire whisk until dressing is well blended. Add cilantro and pepper.

  3. Chop radishes. Cut green onions into thin slices.

  4. Add tomatoes, cucumbers, radishes and green onions to bowl. Stir well.

Summer Vegetables with Citrus Dressing tip: To seed cucumbers easily, slice them lengthwise into quarters. Hold each quarter on end and simply slice the seeds away with one motion. Tomatoes can be seeded by cutting them into halves horizontally and gently squeezing out the seeds.

Radishes and green onions are mentioned in the directions but not ingredient list. However, I added 2 radishes and 1 green onion (white and green part), and it was great. I don't feel that this salad should be judged on the previous commentary, either. If you don't like cilantro, pass on it...it will still taste great. Or add parsley or basil (or both) even dill, instead. Still yummy.
